Grilled Thai Peanut Chicken Thighs with Cilantro-Lime Sauce
Ingredients
- 1/4 cup reduced sodium soy sauce
- 4 cloves garlic, minced
- 2 tablespoons freshly grated ginger
- 2 tablespoons brown sugar
- 1 tablespoon fish sauce
- 1 tablespoon yellow curry powder
- 2 pounds boneless, skinless chicken thighs
- 2 tablespoons vegetable oil
- 1/2 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
- 1 lime, juiced and zested
- 1/4 cup fresh cilantro leaves, chopped
- 1/4 cup creamy peanut butter
- 1 tablespoon chili garlic sauce
Instructions
1. Prepare the Marinade:
- In a large mixing bowl, combine the soy sauce, minced garlic, freshly grated ginger, brown sugar, fish sauce, and yellow curry powder.
- Stir until the brown sugar is fully dissolved and the ingredients are well incorporated.
2. Marinate the Chicken:
- Add the chicken thighs to the marinade, ensuring each piece is well coated.
- Cover and refrigerate for at least 1 hour to allow the flavors to infuse the chicken. For best results, marinate for up to 4 hours.
3. Preheat the Charcoal Grill:
- Prepare a charcoal grill for medium-high heat. Arrange hot coals on one side of the grill to create a two-zone cooking area.
- Lightly oil the grill grates to prevent sticking.
4. Prepare the Peanut Sauce:
- In a small saucepan, over low heat, combine the creamy peanut butter, chili garlic sauce, and lime juice.
- Stir continuously until smooth and heated through, about 5 minutes.
- Remove from heat and set aside.
5. Grill the Chicken:
- Remove chicken from the marinade and pat dry with paper towels. Discard the remaining marinade.
- Brush the chicken thighs with vegetable oil, and season with kosher salt and freshly ground black pepper.
- Place chicken on the hot side of the grill and sear for 2-3 minutes on each side to develop a nice char.
- Move chicken to the cooler side of the grill, cover, and cook for an additional 10-12 minutes, or until the internal temperature reaches 165°F.
6. Serve:
- Drizzle the grilled chicken thighs with the peanut sauce.
- Garnish with chopped fresh cilantro leaves and lime zest.
- Serve immediately with lime wedges for squeezing on the side.
