Grilled Vegetable and Mozzarella Caprese on French Bread



Ingredients



- 1 large red bell pepper, halved and seeded
- 1 large zucchini, sliced into 1/4-inch rounds
- 1 large yellow squash, sliced into 1/4-inch rounds
- 1 large red onion, sliced into 1/4-inch rings
- 1 loaf of French bread, cut in half lengthwise
- 8 oz mini mozzarella balls, drained
- 1/2 cup pesto
- 12 fresh basil leaves
- 2 tbsp olive oil
- Salt and freshly ground black pepper, to taste

Instructions



1. Preheat the Grill:
- Prepare your charcoal grill for medium-high heat. Arrange the coals for even heating.

2. Prepare the Vegetables:
- Lightly drizzle the bell pepper, zucchini, yellow squash, and red onion with olive oil.
- Season with salt and freshly ground black pepper.

3. Grill the Vegetables:
- Place the prepared vegetables directly on the grill grate.
- Grill for about 5-7 minutes per side, or until the vegetables are tender and have distinct grill marks. Use tongs to turn them as needed.
- Once cooked, remove the veggies from the grill and set aside.

4. Grill the Bread:
- Place the halved French bread, cut side down, on the grill.
- Toast for about 1-2 minutes, or until the bread is lightly charred and crispy. Remove from heat.

5. Assemble the Caprese:
- Spread a generous amount of pesto on the cut side of the grilled French bread.
- Layer on the grilled vegetables evenly across the bread halves.
- Distribute the mini mozzarella balls over the top.
- Tear fresh basil leaves and scatter them over the mozzarella for a burst of flavor.

6. Serve:
- Slice the bread into serving-sized pieces.
- Arrange on a platter and serve immediately for a fresh and savory lunch.
