Grilled Vegetable Platter with Herbed Cheese Crumbles



Ingredients



- 2 tablespoons Dijon mustard
- 3 tablespoons balsamic vinegar
- 1/4 cup extra virgin olive oil
- 2 cloves garlic, minced
- 1/2 teaspoon black pepper
- 2 medium zucchini, sliced lengthwise
- 2 medium yellow squash, sliced lengthwise
- 1 red bell pepper, halved and seeded
- 1 yellow bell pepper, halved and seeded
- 1 bunch asparagus, (about 12 spears), trimmed
- 4 green onions, trimmed
- 2 tablespoons canola oil
- 1 teaspoon kosher salt
- 2 ounces goat cheese, crumbled
- 2 ounces feta cheese, crumbled
- 1/4 cup fresh basil leaves, thinly sliced

Instructions



1. Prepare the Marinade:
In a small bowl, whisk together the Dijon mustard, balsamic vinegar, extra virgin olive oil, minced garlic, and black pepper. Set the marinade aside.

2. Prepare the Vegetables:
Arrange the zucchini, yellow squash, bell peppers, asparagus, and green onions in a single layer on a tray. Brush all vegetables with canola oil and sprinkle evenly with kosher salt.

3. Heat the Grill:
Preheat the charcoal grill to medium-high heat. Ensure the grill grates are clean and oiled.

4. Grill the Vegetables:
Place the vegetables directly on the grill. Cook the zucchini and yellow squash for about 4 minutes per side, the bell peppers for about 5 minutes per side, the asparagus for about 3 minutes per side, and the green onions for about 2 minutes per side, or until tender with slight char marks. Transfer grilled vegetables to a serving platter.

5. Dress the Vegetables:
Drizzle the prepared marinade over the grilled vegetables while they are still warm. Toss gently to coat.

6. Garnish with Cheese and Basil:
Sprinkle the crumbled goat cheese and feta cheese over the vegetables. Top with thinly sliced fresh basil leaves.
