Grilled Yellow Pepper Queso Fresco Delight
Ingredients
- 4 large yellow peppers
- 8 ounces queso fresco, crumbled
- 3 tablespoons olive oil
- 1 teaspoon sea salt
- 1 teaspoon black pepper
Instructions
1. Prepare the Charcoal Grill
- Light the charcoal and allow it to heat until it achieves medium heat. This should take approximately 15-20 minutes.
2. Prepare the Peppers
- Rinse the yellow peppers under cold water and pat them dry with a clean kitchen towel.
- Slice each pepper in half lengthwise, removing the stem, seeds, and membranes.
3. Marinate the Peppers
- In a small bowl, mix the olive oil, sea salt, and black pepper.
- Brush the inside and outside of each pepper half generously with the olive oil mixture, ensuring they are well-coated.
4. Grill the Peppers
- Place the pepper halves on the charcoal grill, skin-side down.

- Serve immediately while warm for the best texture and flavor.
