Grilled Zucchini with Spicy Mint Chimichurri
Ingredients
- 4 medium zucchinis, sliced lengthwise into 1/4-inch thick strips
- 1 red chili, finely chopped
- 3 tablespoons olive oil
- 3 cloves garlic, minced
- 1/4 cup fresh mint leaves, finely chopped
- 2 tablespoons fresh lemon juice
- Salt and pepper to taste
Instructions
1. Prepare the Zucchini:
- Lay the zucchini strips on a baking sheet.
- Drizzle 2 tablespoons of olive oil over the zucchini.
- Sprinkle with salt and pepper to taste.
- Set aside while preparing the mint chimichurri.
2. Make the Spicy Mint Chimichurri:
- In a small mixing bowl, combine the chopped red chili, minced garlic, chopped mint leaves, and lemon juice.
- Add the remaining tablespoon of olive oil and mix thoroughly.
- Season with salt and pepper to taste.
- Allow the chimichurri to sit for at least 5 minutes to let the flavors meld.
3. Grill the Zucchini:
- Preheat your charcoal grill to medium-high heat.
- Place the zucchini strips directly on the grill grates.
- Grill for about 2-3 minutes on each side, or until they have nice char marks and are tender.
4. Serve:
- Transfer the grilled zucchini to a serving platter.
- Spoon the spicy mint chimichurri over the grilled zucchini strips.
- Serve immediately as a delicious lunch appetizer or side dish.
