- 2 tablespoons olive oil
- 6 slices bacon, diced
- 1 medium onion, finely chopped

- 4 cups chicken stock
- 4 medium potatoes, peeled and diced
- 1 cup frozen corn
- 1 cup half-and-half
- 1 cup shredded cheddar cheese
- 1 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- 1/2 teaspoon ground turmeric

Instructions



1. Heat the Olive Oil:
In a large pot, heat the olive oil over medium heat until shimmering.

2. Cook the Bacon:
Add the diced bacon and cook until crisp, about 5 minutes. Remove the bacon with a slotted spoon and set aside.

3. Sauté the Onions:
In the same pot, add the chopped onion and cook until softened and slightly translucent, about 4 minutes.

4. Make the Roux:
Stir in the butter and let it melt. Sprinkle the flour over the onions and cook, stirring constantly, for 1 minute.

5. Season and Add Stock:
Stir in the mixed seasonings, salt, pepper, and turmeric. Gradually whisk in the chicken stock until smooth and well combined.

6. Cook the Potatoes:
Add the diced potatoes to the pot. Bring the mixture to a gentle boil, then reduce heat to a simmer. Cover and cook until the potatoes are tender, about 15 minutes.

7. Incorporate Corn and Half-and-Half:
Stir in the frozen corn and half-and-half. Continue to cook until heated through, about 5 minutes.

8. Final Touch:
Add the shredded cheddar cheese and cooked bacon, stirring until the cheese has melted and is evenly distributed.

9. Adjust Seasonings:
Taste the chowder and adjust seasoning with additional salt and pepper, if needed.
