Hearty Bean Medley Stove-Top Snack



Ingredients



- 1 cup black beans
- 1 cup navy beans
- 1 cup pinto beans
- 1 cup kidney beans
- 1 cup garbanzo beans
- 1 cup Organic Bean Trio (includes kidney, pinto, and black beans)
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 medium onion, finely chopped
- 1 tablespoon ground cumin
- 1 tablespoon smoked paprika
- 1 teaspoon salt
- 1 teaspoon black pepper
- 4 cups vegetable broth
- Juice of 1 lime
- Fresh cilantro, for garnish

Instructions



1. Prepare the Beans:
- Rinse the dried beans under cold water. Place the black beans, navy beans, pinto beans, kidney beans, and garbanzo beans in a large bowl. Cover with fresh water and soak for at least 8 hours or overnight.

2. Cook the Beans:
- Drain and rinse the soaked beans. In a large pot, add the prepared beans and the Organic Bean Trio. Cover with the vegetable broth. Bring to a boil over medium-high heat, then reduce to a simmer. Cover the pot and cook for about 1 hour, or until the beans are tender.

3. Prepare the Flavor Base:
- In a separate large skillet over medium heat, add olive oil. Once the oil is hot, add the minced garlic and chopped onion. Sauté for 5 minutes until the onions are translucent and fragrant.

4. Season the Beans:
- Stir in the cumin, smoked paprika, salt, and black pepper into the skillet with the garlic and onion. Cook for another 2 minutes, allowing the spices to become aromatic.

5. Combine and Simmer:
- Transfer the sautéed garlic, onion, and spice mixture into the pot with the beans. Mix well, ensuring even coating of the beans with the seasonings. Simmer for an additional 15 minutes to allow the flavors to meld together.

6. Finish and Serve:
- Stir in the lime juice and adjust seasoning to taste. Serve the bean medley hot, garnished with fresh cilantro. Enjoy as a delicious and hearty snack.
