Hearty Beef and Vegetable Stew



Ingredients


- 1 1/2 pounds beef, cut into 1-inch cubes
- 2 tablespoons oil
- 1 cup fresh or frozen peas
- 2 medium onions, diced
- 1 cup sliced okra
- 2 stalks celery, chopped
- 2 medium carrots, diced
- 2 tomatoes, chopped
- 3 medium potatoes, peeled and cubed
- 4 cups beef stock
- 1 can (15 oz) butter beans, drained and rinsed
- 1 1/2 teaspoons salt
- 1 teaspoon pepper

Instructions


1. Preparation
Start by preparing all ingredients. Cube the beef, dice the onions and carrots, slice the okra, chop the celery and tomatoes, peel and cube the potatoes, and drain and rinse the butter beans.

2. Brown the Beef
- Heat 2 tablespoons of oil in a large pot over medium-high heat.
- Add the cubed beef in batches to avoid overcrowding.
- Brown the beef on all sides, about 5 minutes per batch. Remove and set aside.

3. Sauté the Vegetables
- In the same pot, add the diced onions, cooking until translucent, about 3 minutes.
- Add the sliced okra, chopped celery, and diced carrots. Sauté for an additional 5 minutes until the vegetables are slightly softened.

4. Simmer the Stew
- Return the browned beef to the pot.
- Add the chopped tomatoes, cubed potatoes, and beef stock.
- Bring to a boil, then reduce the heat to a low simmer.
- Cover and let cook for 1 hour, stirring occasionally.

5. Add Peas and Butter Beans
- After 1 hour, add the peas and butter beans to the stew. Stir to combine.
- Season with 1 1/2 teaspoons of salt and 1 teaspoon of pepper.
- Continue to simmer for an additional 30 minutes until all vegetables are tender.

6. Final Adjustments
- Taste and adjust seasoning as needed.
- Allow the stew to rest for 5 minutes before serving.
