Hearty Chicken and Vegetable Stew with Fluffy Dumplings
Ingredients
- 4 boneless, skinless chicken thighs
- 1 large onion, diced
- 2 large carrots, sliced
- 3 stalks celery, sliced
- 6 cups chicken broth
- 1 cup frozen peas
- 1 tablespoon salt
- 1 teaspoon black pepper
- 1 bay leaf
- 1 teaspoon poultry seasoning
- 1 teaspoon dried thyme leaves
- 1/2 teaspoon ground sage
For the Dumplings:
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1 teaspoon salt
- 4 tablespoons shortening
- 1 cup milk
Instructions
1. Prepare the Chicken:
Season the chicken thighs with half the salt and pepper. Set aside.
2. Saute the Vegetables:
Heat a large pot over medium-high heat. Add a tablespoon of oil and sauté the onions, carrots, and celery until the onions are translucent, about 5 minutes.
3. Cook the Chicken:
Add the seasoned chicken thighs to the pot and brown them on both sides, about 4 minutes per side.
4. Simmer the Stew:
Pour in the chicken broth. Add the bay leaf, poultry seasoning, thyme, ground sage, remaining salt, and pepper. Bring to a boil, then reduce the heat to low. Cover and simmer for about 45 minutes until the chicken is tender and cooked through.
5. Prepare the Dumplings:
In a mixing bowl, combine flour, baking powder, and salt. Cut in the shortening until the mixture resembles coarse crumbs. Stir in milk until a soft dough forms.
6. Add Peas and Thicken the Stew:
Add the frozen peas to the pot. Mix 1/4 cup of flour with 1/2 cup of water to create a slurry and stir into the pot to thicken the stew slightly. Cook for another 5 minutes.
7. Cook the Dumplings:
Drop spoonfuls of the dumpling dough onto the simmering stew. Cover the pot and cook for 15 minutes until the dumplings are cooked through and fluffy.
8. Finish and Serve:
Remove the bay leaf. Adjust seasoning to taste. Serve the stew hot, garnished with fresh herbs if desired.
