Hearty Chicken and Vegetable Stew
Ingredients
- 2 lbs chicken thighs, bone-in, skin removed
- 2 large potatoes, peeled and diced
- 1 large onion, chopped
- 2 stalks celery, sliced
- 3 large carrots, sliced
- 2 large tomatoes, diced
- 1 cup green beans, trimmed and cut into 1-inch pieces
- 1 cup frozen corn
- 4 cups chicken broth
- 4 cloves garlic, minced
- 1 tablespoon Italian seasoning
- 1 teaspoon dried rosemary
- 1 teaspoon dried thyme
- 1/4 cup fresh parsley, chopped
- 1 tablespoon fresh basil, chopped
- 2 tablespoons olive oil
- Salt and black pepper to taste
Instructions
1. Prepare the Ingredients:
- Begin by preparing all vegetables. Dice the potatoes, chop the onion, slice celery and carrots, and dice the tomatoes. Mince the garlic cloves.
2. Sauté the Vegetables:
- Heat 2 tablespoons of olive oil in a large pot over medium heat. Add chopped onion and garlic, sauté until the onion is translucent, about PT3M (3 minutes).
3. Brown the Chicken:
- Add chicken thighs to the pot. Brown them on both sides, which should take about PT8M (8 minutes). Remove the chicken from the pot and set aside.
4. Cook the Vegetables:
- Into the same pot, add the potatoes, celery, and carrots. Cook for about PT5M (5 minutes), stirring occasionally to avoid sticking.
5. Build the Soup Base:
- Pour in the chicken broth, tomatoes, and return the browned chicken thighs to the pot. Stir in Italian seasoning, rosemary, and thyme. Bring the mixture to a boil.
6. Simmer the Stew:
- Reduce heat to low, cover, and let the stew simmer for PT45M (45 minutes) until the chicken is cooked through and the vegetables are tender.
7. Add Remaining Vegetables:
- Stir in green beans and frozen corn, cook uncovered for PT15M (15 minutes) until tender but still vibrant in color.
8. Final Seasoning:
- Season the stew with salt and black pepper to taste. Stir in chopped parsley and basil just before serving for a fresh burst of flavor.
