Hearty Double-Bread Tomato Grilled Sandwich
Ingredients
- 2 juicy ripe tomatoes, sliced
- 2 slices rye bread
- 2 slices sourdough bread
- 2 tablespoons mayonnaise
- 1/2 teaspoon salt
- 1/4 teaspoon freshly cracked black pepper
- 2 tablespoons unsalted butter
Instructions
1. Prep the Tomatoes:
- Wash the tomatoes thoroughly under cold water.
- Slice each tomato into 1/4-inch thick rounds. Set aside the slices on a plate.
- Sprinkle the tomato slices evenly with salt and freshly cracked black pepper to enhance their natural sweetness and flavor.
2. Prepare the Bread:
- Lay out the slices of rye and sourdough bread on a clean surface.
- Spread 1/2 tablespoon of mayonnaise on one side of each slice of bread. This will create a golden crust when grilled.
3. Assemble the Sandwich:
- Place a slice of rye bread, mayonnaise side down, on a plate.
- Layer half of the seasoned tomato slices on the rye slice.
- Top with a slice of sourdough bread, mayonnaise side up.
- Repeat the layering with the remaining tomato slices and finish with the second rye bread slice, mayonnaise side up, to complete your sandwich stack.
4. Grill on Stove:
- Heat a non-stick skillet over medium heat and add 1 tablespoon of butter. Allow it to melt and begin to sizzle gently.
- Carefully place the assembled sandwich stack into the skillet. Grill for about 3-4 minutes on each side, pressing gently with a spatula, until the bread achieves a golden-brown crust and the tomatoes inside are heated through.
- If necessary, add the remaining tablespoon of butter when flipping the sandwich to ensure both sides are evenly cooked.
5. Serve:
- Remove the sandwich from the skillet onto a cutting board.
- Let it rest for a minute. Then, using a sharp knife, cut it diagonally.
- Serve immediately for a fresh, crunchy bite that pairs beautifully with the warm, juicy tomatoes inside.
