Ingredients
- 3 tablespoons olive oil
- 3 cloves garlic, minced
- 1 large onion, chopped
- 2 large carrots, diced
- 1 cup corn kernels
- 1 cup broccoli florets
- 1 cup green beans, trimmed and chopped
- 1 cup mushrooms, sliced
- 4 cups vegetable broth
- 2 cups milk
- Salt and pepper to taste
Instructions
1. Prepare the Vegetables:
- Start by washing and prepping all your vegetables. Chop the onion, dice the carrots, trim and chop the green beans, and slice the mushrooms.
2. Heat the Oil:
- In a large pot, heat 3 tablespoons of olive oil over medium heat. Allow it to warm for about 1 minute until lightly shimmering.
3. Sauté Aromatics:
- Add the minced garlic and chopped onion to the pot. Sauté for about 3 minutes until the onions become translucent and the garlic is fragrant.
4. Cook the Vegetables:
- Stir in the carrots and green beans. Cook for approximately 5 minutes, allowing them to slightly soften.
- Add the corn, broccoli florets, and sliced mushrooms. Sauté for an additional 3 minutes.
5. Add Broth and Milk:
- Pour in 4 cups of vegetable broth and bring the mixture to a gentle boil.
- Reduce the heat to low and stir in 2 cups of milk. Let it simmer for about 15 minutes, stirring occasionally.
6. Season and Serve:
- Season the soup with salt and pepper to taste. Adjust the seasoning according to your preference.
- Serve hot, garnishing with a drizzle of olive oil if desired.
