Hearty Italian Sausage and Bean Medley Soup
Ingredients
- 2 tablespoons olive oil
- 1 large onion, diced
- 3 cloves garlic, minced
- 1/2 pound spicy Italian sausage, casings removed
- 1/2 pound mild Italian sausage, casings removed
- 1/2 cup chorizo, diced
- 1 can (15 oz) cannellini beans, drained and rinsed
- 1 can (15 oz) pinto beans, drained and rinsed
- 1/2 cup lupini beans, drained and rinsed
- 6 cups chicken broth
- 1 Parmesan rind
- 3 cups baby spinach, rinsed
- 2 cups kale, chopped and rinsed
- 2 cups collard greens, chopped and rinsed
- 1 teaspoon crushed red pepper flakes
- Salt and pepper to taste
- 1/2 cup grated Parmesan cheese
Instructions
1. Prepare the Ingredients:
- Dice the onion and mince the garlic.
- Remove the casings from the sausages.
- Drain and rinse the beans.
2. Cook the Aromatics:
- In a large pot over medium heat, add olive oil and heat for about 1 minute.
- Add the diced onion and minced garlic. Sauté until the onion becomes translucent, approximately 5 minutes.
3. Brown the Meats:
- Add the spicy Italian sausage, mild Italian sausage, and diced chorizo to the pot.
- Cook, stirring frequently to crumble the sausages, until browned, about 7-10 minutes.
4. Combine the Beans and Broth:
- Stir in the cannellini beans, pinto beans, lupini beans, and chicken broth.
- Add the Parmesan rind to enhance flavor.
- Bring the mixture to a boil over high heat.
5. Simmer the Soup:
- Reduce the heat to low and cover the pot.
- Allow the soup to simmer for 30 minutes, stirring occasionally.
6. Incorporate Greens:
- Uncover the pot and stir in the baby spinach, kale, and collard greens.
- Continue to simmer until the greens are tender, about 10 minutes.
7. Season and Serve:
- Add crushed red pepper flakes, salt, and pepper to taste.
- Remove the Parmesan rind from the soup.
- Ladle the soup into bowls and sprinkle with grated Parmesan cheese.
- Serve hot.
