Hearty Italian Sausage and Bean Soup
Ingredients
- 1 lb Italian sausage, casings removed
- 1 large yellow onion, diced
- 2 medium carrots, peeled and diced
- 2 stalks celery, diced
- 4 cloves garlic, minced
- 4 cups beef broth
- 1 can (14.5 oz) fire-roasted diced tomatoes
- 1 can (15 oz) red kidney beans, drained and rinsed
- 1 can (15 oz) cannellini beans, drained and rinsed
- 1 cup ditalini pasta
- 1/4 cup fresh basil leaves, chopped
- 1/2 cup grated Parmesan cheese
- 2 cups fresh spinach, chopped
- 1 cup kale, stems removed and leaves chopped
- Salt and black pepper to taste
- 2 tbsp olive oil
Instructions
1. Cook the Sausage:
Heat 1 tablespoon of olive oil in a large soup pot over medium heat. Add the Italian sausage and cook, breaking it apart with a wooden spoon until browned and cooked through, approximately PT10M (10 minutes). Remove the sausage using a slotted spoon and set aside.
2. Sauté the Vegetables:
In the same pot, add the remaining tablespoon of olive oil. Sauté the diced onion, carrots, and celery over medium heat until the vegetables are tender, approximately PT8M (8 minutes). Stir in the minced garlic and cook for an additional minute until fragrant.
3. Simmer the Soup:
Add the beef broth to the pot and bring to a simmer. Stir in the fire-roasted diced tomatoes, kidney beans, and cannellini beans. Return the sausage to the pot. Season with salt and black pepper to taste. Let simmer on low heat for PT30M (30 minutes) to allow the flavors to meld.
4. Cook the Pasta:
In a separate pot, bring water to a boil and cook the ditalini pasta according to package instructions until al dente, approximately PT8M (8 minutes). Drain and set aside.
5. Add Greens and Pasta:
Stir in the spinach, kale, and cooked pasta into the soup. Allow the greens to wilt and the pasta to heat through, about PT5M (5 minutes).
6. Final Touches:
Remove the pot from heat. Stir in the chopped fresh basil and grated Parmesan cheese. Adjust seasoning with additional salt and pepper if necessary.
7. Serve:
Ladle the soup into bowls, and if desired, garnish with additional grated Parmesan cheese and fresh basil.
