Hearty Italian Tortellini Soup with Greens and Beans
Ingredients
- 8 oz tortellini (cheese or meat-filled)
- 6 cups tomato broth
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon Italian herbs (dried)
- 2 cups baby spinach
- 4 oz pancetta, diced
- 1/2 pound Italian sausage, casings removed
- 1 cup canned cannellini beans, drained and rinsed
- 1 cup canned kidney beans, drained and rinsed
- 1 cup Swiss chard, chopped
- 1 cup kale, chopped
- 1 cup escarole, chopped
- 1/2 teaspoon red pepper flakes
- 1/4 teaspoon black pepper
- 1/2 cup Parmesan cheese, grated
- 2 tablespoons fresh parsley, chopped (plus more for garnish)
Instructions
1. Prepare the Ingredients
Chop the Swiss chard, kale, and escarole into bite-sized pieces. Mince the garlic and drain and rinse the beans.
2. Cook the Pancetta and Sausage
In a large, heavy-bottomed pot, heat olive oil over medium heat. Add the diced pancetta and cook until crispy, about 5 minutes. Add the Italian sausage, breaking it into small pieces with a wooden spoon. Cook until browned, about 6-8 minutes.
3. Sauté the Aromatics
Stir in the minced garlic, continuing to cook for 1 minute until fragrant. Sprinkle the red pepper flakes and Italian herbs into the pot, stirring well to combine.
4. Build the Soup Base
Pour in the tomato broth and stir in the cannellini and kidney beans. Bring the mixture to a boil over high heat.
5. Add the Greens and Tortellini
Once boiling, reduce the heat to a simmer. Add the chopped Swiss chard, kale, and escarole. Simmer gently for 5 minutes until the greens begin to soften.
6. Cook the Tortellini
Stir in the tortellini and cook according to package instructions, typically 7-9 minutes. Add the baby spinach during the last 2 minutes of cooking.
7. Finish the Soup
Season with black pepper and stir in the Parmesan cheese and fresh parsley. Mix well until the cheese is melted and the parsley is distributed evenly.
8. Garnish and Serve
Ladle the soup into bowls and garnish with additional Parmesan cheese and parsley if desired. Serve hot.
