Hearty Kale and Cottage Cheese Oatmeal Breakfast Bowl



Ingredients



- 2 tablespoons butter
- 1 cup old-fashioned rolled oats
- 1/4 teaspoon kosher salt
- 2 cups water
- 1 cup baby kale, loosely packed
- 1 tablespoon olive oil
- 1/2 cup low-fat cottage cheese
- 1/2 cup cherry tomatoes, halved
- A pinch of flaked sea salt
- A pinch of Aleppo pepper
- 1 tablespoon lemon juice

Instructions



1. Prepare the Oats:
- In a medium saucepan over medium heat, melt 2 tablespoons of butter.
- Once the butter is melted and bubbling, add 1 cup of old-fashioned rolled oats. Stir occasionally, toasting them for about 2 minutes until they become fragrant.

2. Cook the Oats:
- Add 2 cups of water and 1/4 teaspoon of kosher salt to the saucepan with the oats.
- Bring the mixture to a gentle boil, then reduce the heat to low. Let it simmer for approximately 10 minutes or until the oats are tender and have absorbed most of the water, stirring occasionally.

3. Sauté the Kale:
- While the oats are cooking, heat 1 tablespoon of olive oil in a skillet over medium heat.
- Add 1 cup of baby kale and sauté for about 3 minutes until the kale is wilted but still vibrant in color. Remove from heat and set aside.

4. Assemble the Breakfast Bowl:
- Once the oats are cooked, divide them equally between four serving bowls.
- Top each bowl with a portion of sautéed kale, 2 tablespoons of low-fat cottage cheese, and a portion of halved cherry tomatoes.

5. Season and Serve:
- Drizzle each bowl with a squeeze of fresh lemon juice.
- Finish by sprinkling a pinch of flaked sea salt and a pinch of Aleppo pepper on top for added flavor.
- Serve immediately while warm, enjoy the vibrant, savory breakfast bowl!
