Hearty Lentil and Carrot Fritters with Tzatziki Drizzle
Ingredients
- 1 cup lentils
- 2 large carrots, grated
- 1/4 cup fresh parsley, chopped
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 2 large eggs
- 1/2 cup breadcrumbs
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon paprika
- 2 green onions, thinly sliced

Instructions
1. Prepare Lentils:
Rinse 1 cup of lentils under cold water. In a pot, cover lentils with water and bring to a boil over medium-high heat. Reduce heat to low, cover, and simmer until tender, about 25 minutes. Drain and let cool.

4. Pan Fry:
Heat 2 tablespoons of olive oil in a large skillet over medium heat. Carefully add fritters to the skillet, cooking in batches to avoid overcrowding. Fry each side until golden brown and crisp, about 4-5 minutes per side. Transfer to a paper towel-lined plate to drain excess oil.
