Hearty Matzo Ball Soup with Fresh Herbs
Ingredients
For the Matzo Balls:
- 4 large eggs
- 0.25 cup chicken schmaltz (melted)
- 1 cup matzo meal

- 4 cups water

Instructions
Step 1: Prepare the Matzo Balls
1. In a large mixing bowl, beat the eggs thoroughly. Add melted chicken schmaltz and continue to mix until well blended.
2. Stir in the matzo meal along with 1 tablespoon of chicken broth and 1 teaspoon of kosher salt. Mix until the ingredients are fully combined.
3. Cover the bowl with plastic wrap and refrigerate for at least 1 hour to allow the mixture to firm up and flavors to meld.
Step 2: Form and Cook the Matzo Balls
1. Remove the mixture from the refrigerator. With wet hands, shape the mixture into balls approximately the size of a walnut.
2. In a large pot, bring 4 cups of salted water to a gentle boil. Carefully drop in the matzo balls.
3. Cover the pot, reduce the heat to a simmer, and cook the matzo balls for about 40 minutes, until they've roughly doubled in size.
Step 3: Prepare the Soup Base
1. In a separate large pot, combine the chicken broth and 4 cups of water. Bring the mixture to a gentle simmer over medium heat.
2. Add the table salt, adjusting to your taste preference.
Step 4: Assemble and Serve
1. Gently transfer the cooked matzo balls to the pot with the soup base using a slotted spoon.
2. Add the chopped parsley and dill, stirring gently to incorporate the herbs.
3. Allow the soup to simmer gently for another 5-10 minutes for the flavors to meld.
4. Taste and adjust seasoning as necessary, then serve the soup hot, garnished with additional fresh herbs if desired.
