Hearty Mediterranean Chickpea and Lentil Stew with Garlic Kale
Ingredients
Main Ingredients:
- 2 tablespoons olive oil
- 1 medium onion, finely chopped
- 4 cloves garlic, minced
- 1 cup canned chickpeas, drained and rinsed
- 1 cup canned lentils, drained and rinsed
- 1 can (15 oz) tomatoes, diced
- 1 cup vegetable broth
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1 teaspoon paprika
- Salt and pepper to taste
Green Ingredients:
- 2 cups fresh kale, stems removed and leaves chopped
- 2 cups fresh spinach, chopped
- 1 cup collard greens, chopped
Serving Components:
- 1 cup cooked rice (for serving)
- 1 cup cooked oatmeal pasta (for serving)
- 1/2 cup mixed berries for garnish
Optional:
- Fresh strawberries, sliced, for a fresh side
- A dollop of yogurt for creaminess when serving
Instructions
1. Prepare the Base:
- Heat olive oil in a large pot over medium heat.
- Add finely chopped onion and sauté until translucent, about 5 minutes.
- Add minced garlic and sauté for another 2 minutes until fragrant.
2. Build the Stew:
- Stir in chickpeas, lentils, and diced tomatoes. Combine well.
- Pour in vegetable broth, then add oregano, thyme, and paprika.
- Season with salt and pepper.
- Bring to a gentle simmer, and let it cook uncovered for about 20 minutes, allowing flavors to meld and the mixture to thicken.
3. Incorporate the Greens:
- Add kale, spinach, and collard greens to the stew.
- Stir well to incorporate, cover the pot, and allow to cook for another 10 minutes, or until the greens have wilted and softened.
4. Prepare Side and Serve:
- While the stew is cooking, heat additional olive oil in a pan over medium heat, add reserved chopped garlic, sauté until golden.
- Toss in kale leaves, sauté for 3-5 minutes until wilted but still vibrant green.
- Serve the stew hot over a combination of cooked rice and oatmeal pasta.
- Garnish with fresh berries and provide strawberries on the side.
- Optionally, top with a dollop of yogurt for creaminess.
