Hearty Oven-Baked Ham and Cheese Breakfast Casserole
Ingredients
- 4 cups potatoes, thinly sliced
- 2 cups ham, diced
- 1 cup shredded cheddar cheese
- 6 large eggs
- 2 cups fresh spinach, chopped
- 2 green onions, sliced
- 1 tablespoon olive oil
- 1 cup half and half
- 1 teaspoon dry mustard
- 1 teaspoon seasoned salt
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
1. Preheat Oven:
Preheat your oven to 350°F (175°C).
2. Prepare the Potatoes:
Place a large skillet over medium heat. Add 1 tablespoon of olive oil and heat until shimmering. Add the thinly sliced potatoes to the skillet. Season with 1/2 teaspoon of salt and 1/4 teaspoon of black pepper. Cook for about 5 minutes, stirring occasionally, until the potatoes start to get tender. Remove from heat and set aside.
3. Mix the Eggs:
In a large mixing bowl, whisk together 6 large eggs, 1 cup of half and half, 1 teaspoon of dry mustard, and 1 teaspoon of seasoned salt until well combined.
4. Assemble the Casserole:
In a greased 9x13-inch baking dish, layer the cooked potatoes evenly across the bottom. Spread 2 cups of chopped fresh spinach over the potatoes. Add the diced ham and sliced green onions. Sprinkle the shredded cheese evenly over the top.
5. Pour Egg Mixture:
Carefully pour the egg mixture over the layered ingredients in the baking dish. Use a spatula to press down gently, ensuring all ingredients are submerged.
6. Bake:
Place the casserole in the preheated oven and bake for 40-45 minutes or until the eggs are set and the top is golden brown.
7. Cool and Serve:
Allow the casserole to cool for about 5 minutes before slicing into squares. Serve warm.
