Hearty Oven-Baked Stuffed Bell Peppers



Ingredients



- 6 large bell peppers
- 1/2 pound ground beef
- 1/2 pound ground turkey
- 1/4 pound Italian pork sausage, casing removed
- 1 cup cooked rice
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (14.5 oz) diced tomatoes, drained
- 1 cup corn kernels (fresh, frozen, or canned)
- 1 cup chopped onion
- 3 cloves garlic, minced
- 1 cup mushrooms, chopped
- 1 cup cooked and shredded chicken
- 1/2 cup green chiles, chopped
- 1 jalapeño, diced (optional, for heat)
- 2 tablespoons Worcestershire sauce
- 1 cup shredded cheese (cheddar, Monterey Jack, or a blend)
- Salt and pepper to taste
- Cooking spray

Instructions



1. Preheat Oven
Preheat your oven to 375°F (190°C).

2. Prepare Bell Peppers
Slice the tops off the bell peppers and remove the seeds and membranes. If necessary, trim just enough off the bottom so they stand upright, being careful not to cut through the bottom.

3. Cook the Meat Mixture
In a large skillet over medium heat, add the ground beef, ground turkey, and Italian pork sausage. Cook until browned and crumbled, about 8-10 minutes. Drain excess fat.

4. Sauté Vegetables
Add the chopped onion, garlic, and mushrooms to the meat in the skillet. Sauté until the onion is translucent, about 5 minutes.

5. Mix Stuffing Ingredients
Add the cooked rice, black beans, diced tomatoes, corn, shredded chicken, green chiles, and jalapeño (if using) to the skillet. Stir in the Worcestershire sauce, salt, and pepper. Mix well.

6. Stuff the Peppers
Evenly divide and stuff the mixture into the prepared bell peppers.

7. Bake the Peppers
Place the stuffed peppers upright in a baking dish coated with cooking spray. Cover with aluminum foil and bake in the preheated oven for 30 minutes.

8. Add Cheese
Remove the foil, sprinkle the shredded cheese over the stuffed peppers, and return to the oven. Bake uncovered for an additional 10-15 minutes, or until the cheese is melted and bubbly.

9. Serve
Let the stuffed peppers cool slightly before serving. Enjoy your hearty and filling dinner!
