Hearty Rotisserie Chicken and Farro Pappardelle with Basil Tomato Sauce
Ingredients

- Freshly ground black pepper, to taste
Serving Suggestions:
- 1 cup arugula
- 1 cup spinach
- Yellow cling peach halves, optional
Instructions
1. Prepare the Ingredients:
- Cook the farro pappardelle pasta according to the package instructions until al dente. Drain and set aside.
- In a skillet over medium heat, cook the zucchini slices until tender, about 4–5 minutes. Remove and set aside.
- Cook bacon strips until crispy. Let cool, then crumble.
2. Make the Basil Tomato Sauce:
- In the same skillet, add the crushed canned tomatoes and bring to a simmer.
- Stir in freshly chopped basil, and season with flaky sea salt and freshly ground black pepper. Simmer for 10 minutes to reduce slightly.
3. Combine Ingredients:
- Add the shredded rotisserie chicken and sweet corn kernels to the skillet. Stir to combine.
- Fold in the ricotta cheese for creaminess.
- Mix the cooked farro pappardelle pasta into the sauce, ensuring the pasta is well-coated.
4. Assemble the Dish:
- Preheat the stovetop grill pan. Grill the mini baguette slices until lightly charred, about 2 minutes per side.
- On a serving platter, arrange the arugula and spinach.
- Top with the pappardelle and chicken mixture.
- Scatter halved cherry tomatoes, sliced zucchini, and crumbled bacon over the top.
- Garnish with chunks of burrata, grated Parmesan, shredded cheddar cheese, and breadcrumbs for texture.
- Serve with optional yellow cling peach halves for a sweet contrast.
