Hearty Sausage and Herb-Stuffed Bread Pudding
Ingredients
- 8 cups bread, cubed
- 4 tablespoons butter
- 1 cup celery, chopped
- 1 cup onions, chopped
- 1 teaspoon poultry seasoning
- 1 teaspoon ground sage
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 1/2 cups chicken broth
- 1 1/2 cups turkey broth
- 2 tablespoons fresh parsley, chopped
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup carrots, diced
- 1/2 cup raisins
- 1/2 cup dried cranberries
- 1 pound sausage, crumbled and cooked
Instructions
1. Prepare Bread Cubes:
Preheat your oven to 350°F (175°C). Spread the cubed bread on a baking sheet in a single layer. Toast in the oven for about 10 minutes, stirring halfway through, until lightly golden and crispy. Remove and let cool.
2. Cook Sausage:
In a large skillet over medium heat, cook the crumbled sausage until browned and fully cooked, approximately 8-10 minutes. Drain any excess fat and set aside.
3. Sauté Vegetables:
In the same skillet, melt the butter. Add the chopped onions, celery, and diced carrots. Sauté until the vegetables are softened, about 5-7 minutes.
4. Add Seasonings:
Stir in the poultry seasoning, sage, thyme, rosemary, salt, and pepper. Cook for an additional 2 minutes to allow the flavors to meld. Remove from heat.
5. Combine Ingredients:
In a large mixing bowl, combine the toasted bread cubes, cooked sausage, sautéed vegetables, raisins, dried cranberries, and parsley. Mix well to distribute the ingredients evenly.
6. Moisten with Broths:
Gradually pour the chicken and turkey broths over the bread mixture, stirring gently to moisten everything evenly. Allow the mixture to sit for about 10 minutes, enabling the bread to absorb the liquid.
7. Bake the Bread Pudding:
Transfer the mixture to a greased 9x13-inch baking dish, spreading it out evenly. Cover with foil and bake in the preheated oven for 30 minutes.
8. Finish Baking for Crispness:
Remove the foil and continue baking for an additional 15-20 minutes until the top is golden and crispy. Remove from the oven and let it cool for about 5 minutes before serving.
