Hearty Sausage and Tortellini Soup
Ingredients
- 1 pound Italian sausage, casings removed
- 1 large onion, diced
- 2 medium carrots, diced
- 2 stalks celery, diced
- 3 cloves garlic, minced
- 1/2 teaspoon crushed red pepper flakes
- 1 teaspoon Italian seasoning
- 1 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
- 2 tablespoons tomato paste
- 2 tablespoons all-purpose flour
- 6 cups chicken broth
- 1 cup half and half
- 10 ounces cheese tortellini
- 5 ounces fresh spinach, roughly chopped
- 1/2 cup grated Parmesan cheese, plus more for serving
Instructions
1. Prepare the Ingredients: Begin by gathering all the ingredients. Dice the onion, carrots, and celery. Mince the garlic. Remove the casings from the sausage if needed.
2. Cook the Sausage: In a large pot over medium-high heat, add the Italian sausage. Break it into pieces with a wooden spoon. Cook until browned and cooked through, about 5-7 minutes. Remove the sausage from the pot and set it aside.
3. Sauté the Vegetables: In the same pot, add the diced onion, carrots, and celery. Sauté for about 5 minutes until softened. Add the minced garlic, crushed red pepper flakes, Italian seasoning, kosher salt, and freshly ground black pepper. Cook for an additional 1-2 minutes until fragrant.
4. Add Tomato Paste and Flour: Stir in the tomato paste and cook for 2 minutes, allowing it to caramelize slightly. Sprinkle the all-purpose flour over the vegetables and stir to coat, cooking for 1 minute more.
5. Pour in the Broth: Slowly add the chicken broth while stirring to ensure there are no lumps. Bring the mixture to a gentle boil over medium-high heat.
6. Simmer the Soup: Once boiling, reduce the heat to low and simmer for about 10 minutes, until the flavors meld together.
7. Incorporate Dairy and Pasta: Stir in the half and half, then add the cheese tortellini. Cook according to the package instructions, typically 6-8 minutes, until the tortellini are tender and heated through.
8. Add Spinach and Cheese: Stir in the chopped fresh spinach and cook until wilted, about 1-2 minutes. Add the cooked sausage back to the pot, along with 1/2 cup of grated Parmesan cheese. Stir well to combine.
9. Serve: Taste for seasoning and adjust if necessary. Ladle the soup into bowls, topping with additional grated Parmesan if desired. Serve hot.
