Ingredients
- 3 pounds beef chuck, cut into 2-inch cubes
- 4 large carrots, peeled and chopped
- 4 medium potatoes, peeled and quartered
- 3 stalks celery, sliced
- 1 large onion, diced
- 4 cloves garlic, minced
- 4 cups beef broth
- 2 tablespoons tomato paste
- 1 teaspoon salt
- 1 teaspoon black pepper
- 2 bay leaves
Instructions
1. Prepare the Beef:
- Season the beef chuck cubes with salt and black pepper.
- In a large skillet over medium-high heat, sear the beef in batches until each side is browned, approximately 3-4 minutes per side. Transfer to the slow cooker.
2. Layer the Vegetables:
- Add the carrots, potatoes, celery, onion, and garlic to the slow cooker, creating a layer over the beef.
3. Mix the Broth and Paste:
- In a mixing bowl, whisk together the beef broth and tomato paste until the paste is fully dissolved.
4. Combine and Season:
- Pour the broth mixture over the layered vegetables and beef in the slow cooker.
- Add the bay leaves to the pot.
5. Slow Cook:
- Cover the slow cooker with a lid and set to low heat.
- Cook for 7-8 hours or until the beef is tender and the vegetables are cooked through.
6. Final Taste and Adjustments:
- Discard the bay leaves. Taste and adjust the seasoning with additional salt and pepper if needed.
