Hearty Stove-Top Beef and Vegetable Stew



Ingredients



- 2 tablespoons olive oil
- 1 large white onion, diced
- 1 pound ground beef
- 3 cloves garlic, minced
- 2 medium carrots, peeled and sliced
- 2 celery stalks, sliced
- 2 tablespoons tomato paste
- 4 russet potatoes, peeled and diced
- 4 cups beef broth
- 1 can (14.5 ounces) fire-roasted diced tomatoes
- 1 tablespoon Worcestershire sauce
- 1 bay leaf
- 2 cups frozen mixed vegetables
- 1 teaspoon Italian seasoning
- Salt and black pepper, to taste
- Fresh parsley, chopped (for garnish)

Instructions



1. Prepare Ingredients: Begin by prepping all your vegetables. Dice the onion, mince the garlic, peel and slice the carrots, and slice the celery.

2. Brown the Ground Beef: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes. Add the ground beef and cook until browned, breaking it apart with a spoon, for about 8 minutes. Drain any excess fat if necessary.

3. Aromatics and Vegetables: Stir in the minced garlic, sliced carrots, and celery. Cook until the vegetables are slightly tender, approximately 5 minutes.

4. Tomato Paste and Seasoning: Add the tomato paste to the pot, cooking it for about 2 minutes, stirring to coat the meat and vegetables. This step helps to sweeten and deepen the tomato's flavor.

5. Potatoes and Liquids: Incorporate the diced russet potatoes, beef broth, fire-roasted diced tomatoes (with their juice), and Worcestershire sauce. Stir to combine.

6. Season and Simmer: Add the bay leaf and Italian seasoning. Season with salt and black pepper to taste. Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for about 30 minutes, or until the potatoes are tender.

7. Final Additions: Stir in the frozen mixed vegetables and continue to simmer for an additional 10 minutes until heated through. Discard the bay leaf before serving.

8. Serve: Ladle the stew into bowls, garnish with freshly chopped parsley, and serve hot.
