Hearty Stove-Top Chicken Noodle Soup
Ingredients
- 1 pound organic chicken breasts
- 8 cups organic chicken broth
- 2 large organic carrots, peeled and sliced
- 2 stalks organic celery, sliced
- 8 ounces egg noodles
- 1 teaspoon salt
- 1 tablespoon fresh herbs (such as thyme and parsley), finely chopped
- 1 tablespoon olive oil
Instructions
1. Prep the Chicken:
- Begin by rinsing the chicken breasts under cold water. Pat them dry with paper towels.
2. Sauté Vegetables:
- In a large pot, heat the olive oil over medium heat.
- Add the sliced carrots and celery. Sauté for about 5 minutes until the vegetables start to soften.
3. Cook the Chicken:
- Place the chicken breasts into the pot, nestling them in between the vegetables.
- Pour the chicken broth over the chicken and vegetables.
- Increase the heat to high and bring the broth to a boil.
4. Simmer the Soup:
- Once boiling, reduce the heat to low. Cover the pot and let it simmer for 25-30 minutes, until the chicken is cooked through and tender.
5. Shred the Chicken:
- Remove the chicken breasts from the pot using tongs and place them on a cutting board.
- Use two forks to shred the chicken into bite-sized pieces and return it to the pot.
6. Add Noodles & Season:
- Add the egg noodles to the pot.
- Stir in the salt and fresh herbs.
- Cover and let the soup simmer for an additional 8-10 minutes until the noodles are cooked to your preference.
7. Adjust & Serve:
- Taste the soup and adjust seasoning as necessary.
- Ladle the hot soup into bowls and enjoy!
