Hearty Stove-Top Chicken & Poblano White Bean Skillet



Ingredients



- 2 tablespoons extra-virgin olive oil
- 1 yellow onion, diced
- 1 poblano pepper, seeded and chopped
- 3 cloves garlic, minced
- 4 boneless, skinless chicken thighs
- 1 cup chicken stock
- 1/2 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- 4 ounces cream cheese, softened
- 1 can (15 ounces) cannellini beans, drained and rinsed
- 1/3 cup sun-dried tomatoes, julienned
- 1/4 cup grated Parmesan cheese
- 2 tablespoons chopped fresh parsley
- 1 tablespoon chopped fresh basil
- 1 tablespoon chopped fresh cilantro
- 1/4 teaspoon crushed red pepper flakes

Instructions



1. Prepare the Vegetables:
- Heat 1 tablespoon of extra-virgin olive oil in a large skillet over medium heat.
- Add diced yellow onion and chopped poblano pepper, sautéing for about 5 minutes until softened.
- Stir in the minced garlic and cook for an additional 1 minute until fragrant. Remove the vegetable mixture from the skillet and set aside.

2. Cook the Chicken:
- In the same skillet, add the remaining 1 tablespoon of olive oil.
- Season the chicken thighs with salt and freshly ground black pepper, then add them to the skillet.
- Cook until the chicken is browned and cooked through, about 6 minutes per side. Remove the chicken from the skillet and set aside to rest.

3. Create the Creamy Base:
- Pour chicken stock into the skillet, scraping up any browned bits from the bottom.
- Lower the heat to medium-low and stir in the softened cream cheese until smooth and well combined.

4. Combine Ingredients:
- Return the vegetable mixture to the skillet along with the cannellini beans and sun-dried tomatoes. Stir to combine.
- Nestle the chicken back into the skillet, covering with the creamy mixture.

5. Finishing Touches:
- Sprinkle the grated Parmesan cheese over the dish, then cover and let it simmer for about 5 minutes to allow all the flavors to meld.
- Before serving, garnish with chopped fresh parsley, basil, cilantro, and a sprinkle of crushed red pepper flakes.
