Hearty Stove-Top Pinto Bean Stew
Ingredients
- 2 cups dry pinto beans
- 8 cups water
- 2 tablespoons oil
- 1 large onion, finely chopped
- 1 teaspoon salt
Instructions
1. Soak the Beans:
- Place the pinto beans in a large bowl. Cover with water and let them soak for at least 8 hours or overnight to soften the beans and reduce cooking time.
2. Prepare the Beans:
- Drain the soaked beans and set them aside.
- In a large pot, add 8 cups of water and bring to a boil over high heat.
3. Cook the Beans:
- Add the drained beans to the boiling water. Reduce the heat to low and let simmer, covered, for about 1 hour until the beans are tender. Stir occasionally and add more water if needed to keep the beans submerged.
4. Prepare the Onion:
- While the beans are cooking, heat 2 tablespoons of oil in a skillet over medium heat. Add the finely chopped onion and sauté for about 5 minutes until golden and translucent.
5. Combine Ingredients:
- Once the beans are tender, add the sautéed onion to the pot of beans. Stir well to combine.
6. Season the Stew:
- Add 1 teaspoon of salt to the pot. Taste and adjust seasoning if necessary.
- Continue to simmer the mixture for another 15 minutes, allowing the flavors to meld together.
7. Serve:
- Remove from heat and let it sit for about 5 minutes before serving.
- Enjoy your hearty stove-top pinto bean stew as a nourishing dinner option. It's great when served with crusty bread or a side salad.
