Hearty Vegetable & Lentil Stove-Top Stew
Ingredients
- 2 large potatoes, peeled and diced
- 1 cup white beans, drained and rinsed
- 1 small head of cauliflower, cut into florets
- 1 cup corn kernels (fresh or canned)
- 2 tomatoes, chopped
- 1 cup dried lentils, rinsed
- 1 teaspoon kosher salt
- 1 tablespoon mixed herbs (such as thyme and rosemary)
- 1 tablespoon spices (such as paprika and cumin)
- 6 cups vegetable broth
Instructions
1. Preparation:
- Gather all ingredients.
- Chop the potatoes, tomatoes, and cauliflower as directed.
2. Cook Lentils:
- In a large pot over medium heat, pour in the vegetable broth.
- Add the lentils and bring to a boil.
