Heavenly Avocado Breakfast Toast with Smoked Salmon and Bacon
Ingredients
- 4 slices of bread
- 2 ripe avocados
- 1 tablespoon lemon juice
- 4 large eggs
- 1 teaspoon black pepper
- 1 teaspoon Togarashi seasoning
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1 medium tomato, diced
- 2 tablespoons fresh herbs (such as parsley or cilantro), chopped
- 1 cup sprouts (such as alfalfa or radish)
- 1 tablespoon chia seeds
- 1 tablespoon flaxseed meal
- 8 ounces smoked salmon
- 4 strips bacon, cooked and crumbled
- 2 sausage links, cooked and sliced
- 1/4 cup hummus
- 4 slices of cheese (your choice)
- 1 teaspoon hot sauce
- 1 tablespoon everything seasoning
- 1/2 cup pico de gallo
- 1/2 cup salsa
Instructions
1. Prepare the Avocado Spread
- Peel and pit the avocados, placing the flesh in a bowl.
- Add 1 tablespoon of lemon juice, 1 teaspoon of salt, and 1 teaspoon of black pepper.
- Mash the ingredients together until smooth and creamy. Set aside.
2. Cook the Eggs
- Heat 1 tablespoon of olive oil in a skillet over medium heat.
- Crack the eggs into the skillet and cook to your desired level (sunny-side-up or over-easy is recommended).
- Sprinkle with Togarashi seasoning and a pinch of salt. Set aside.
3. Toast the Bread
- Heat another tablespoon of olive oil in the same skillet over medium heat.
- Add the bread slices and toast until golden brown on each side. About 2–3 minutes per side.
4. Assemble the Toast
- Spread a thin layer of hummus on each toasted bread slice.
- Add a generous amount of the avocado mixture on top of the hummus.
- Layer with smoked salmon slices and half a slice of cheese.
- Place one cooked egg on each toast.
- Sprinkle crumbled bacon, sausage slices, chia seeds, flaxseed meal, and fresh herbs over the top.
- Add a spoonful of pico de gallo and salsa to each toast.
- Garnish with sprouts and drizzle with a few drops of hot sauce.
- Sprinkle everything seasoning on top for the final touch.
