Heavenly Banana Cream Cake with Vanilla Wafer Crunch



Ingredients



- 1 box yellow cake mix
- 1 package banana cream pudding mix (3.4 oz)
- 3 large eggs
- 1/2 cup vegetable oil
- 3/4 cup mashed ripe bananas (about 2 bananas)
- 2 cups heavy cream
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup Nilla wafer cookies, crushed

Instructions



1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

2. Prepare the Cake Batter:
- In a large mixing bowl, combine the yellow cake mix, banana cream pudding mix, eggs, vegetable oil, and mashed bananas.
- Using an electric mixer, blend the ingredients on low speed for 30 seconds. Then, increase to medium speed and beat for about 2 minutes until the mixture is smooth and well combined.

3. Bake the Cakes:
- Evenly divide the cake batter between the two prepared pans.
- Place the pans in the preheated oven and bake for approximately 25-30 minutes, or until a toothpick inserted into the center comes out clean.

4. Cool the Cakes:
- Allow the cakes to cool in the pans for about 10 minutes before carefully removing them and transferring to a wire rack to cool completely, approximately 1 hour.

5. Prepare the Frosting:
- Pour the heavy cream into a chilled mixing bowl. Add the powdered sugar and vanilla extract.
- Whip the mixture using an electric mixer on high speed until stiff peaks form, around 3-4 minutes.

6. Assemble the Cake:
- Place one cake layer on a serving platter. Spread a generous amount of whipped cream frosting over the top.
- Place the second cake layer on top and spread more whipped cream over the top and sides, ensuring an even coat.

7. Add the Crunch:
