Heavenly Banana Cream Parfait
Ingredients
- 3 ripe bananas, sliced
- 30 vanilla cookies
- 4 large egg yolks
- ½ cup sugar
- 3 tablespoons cornstarch
- 2 cups whole milk
- 1 teaspoon vanilla extract
- 2 tablespoons salted butter
- 1 cup whipped cream
Instructions
1. Prepare the Banana Custard:
- In a medium saucepan, whisk together the egg yolks, sugar, and cornstarch until well combined. Gradually add the milk while stirring.
- Place the saucepan over medium heat. Stir continuously, ensuring the mixture doesn't stick to the bottom of the pan. As it heats up and begins to thicken, continue until it comes to a gentle boil, approximately 8-10 minutes.
- Remove the saucepan from the stove. Stir in the vanilla extract and salted butter until the butter is melted and fully incorporated.
- Cool the custard to room temperature, occasionally stirring to prevent the formation of a skin.
2. Assemble the Parfait:
- Start by crumbling half of the vanilla cookies. Divide the crumbles evenly among the serving glasses as the base layer.
- Add a layer of banana slices over the crumbled cookies.
- Pour the cooled custard over the bananas in each glass.
- Repeat the layers: another layer of crumbled cookies and bananas.
3. Top and Serve:
- Just before serving, top each parfait with a dollop of whipped cream.
- Optionally, garnish with more cookie crumbles or banana slices for added texture and presentation.
4. Chill:
- Chill the parfaits in the refrigerator for at least 1 hour to allow the flavors to meld and the custard to set fully.
