Heavenly Berry Breakfast Crumble
Ingredients
Crust & Topping:
- 2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 1/4 teaspoon kosher salt
- 1 teaspoon ground cinnamon
Filling:
- 1 tablespoon cornstarch
- 2 tablespoons water
- 2 cups fresh raspberries
- 1/2 cup sugar
- 1 tablespoon lemon juice
Topping:
- 1 cup vanilla Greek yogurt
- 2 large eggs
- 3 tablespoons honey
- 1 teaspoon vanilla extract
Garnish:
- 1 cup mixed berries (strawberries, blueberries, blackberries)
Instructions
1. Prepare the Crust:
- Preheat your oven to 350°F (175°C).
- In a medium bowl, combine graham cracker crumbs, melted butter, kosher salt, and cinnamon. Mix until the crumbs are evenly coated with the butter.
- Press the mixture into the bottom of a 9x9-inch baking dish to form a firm crust.
2. Make the Berry Filling:
- In a small bowl, dissolve the cornstarch in water, stirring until smooth.
- In a saucepan over medium heat, combine raspberries, sugar, and lemon juice. Bring to a simmer, stirring occasionally.
- Add the cornstarch mixture to the saucepan and continue to cook until thickened, about 5 minutes. Once thick, remove from heat and let it cool slightly.
3. Prepare the Yogurt Topping:
- In another bowl, whisk together vanilla Greek yogurt, eggs, honey, and vanilla extract until smooth and well combined.
4. Assemble the Crumble:
- Spread the raspberry filling evenly over the prepared crust.
- Gently pour the yogurt mixture over the top of the berry filling.
5. Bake:
- Bake in the preheated oven for 25-30 minutes, or until the topping is set and slightly golden.
- Cool at room temperature, then refrigerate for at least 1 hour before serving.
6. Serve:
- Serve chilled, topped with a handful of mixed berries.
