Heavenly Fruit & Yogurt Breakfast Medley
Ingredients
- 1 cup quick oats
- 1 cup milk
- 1 cup Greek yogurt
- 1 banana, sliced
- 1/2 cup strawberries, hulled and quartered
- 1/2 cup blueberries
- 1/2 cup peaches, chopped
- 2 tablespoons peanut butter
- 1/2 cup fresh blueberries, for garnish
- 1 peach, thinly sliced, for garnish
Instructions
1. Prepare the Oats:
- In a microwave-safe bowl, combine 1 cup of quick oats with 1 cup of milk. Stir well to combine.
- Microwave on high for about PT2M (2 minutes) until the oats have absorbed most of the milk and are fully cooked. Stir midway through for even cooking.
- Allow the oats to cool for a 1–2 minute duration before proceeding.
2. Mix the Medley:
- Add 1 cup of Greek yogurt to the cooked oats and stir until thoroughly mixed, ensuring a creamy base.
- Gently fold in the sliced banana, quartered strawberries, 1/2 cup of blueberries, and chopped peaches.
- Incorporate 2 tablespoons of peanut butter into the mixture, stirring until evenly distributed for a nutty flavor.
3. Garnish and Serve:
- Transfer the mixture to individual serving bowls.
- Top each bowl with the remaining fresh blueberries and garnish with peach slices for a vibrant, fresh touch.
- This may be enjoyed warm from the microwave or chilled.
