Heavenly Pineapple Banana Cake with Cream Cheese and Ermine Frosting



Ingredients



For the Cake:
- 1 3/4 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground allspice
- 1/3 cup vegetable oil
- 1 cup crushed pineapple, drained
- 3/4 cup banana puree (about 2 ripe bananas)
- 1/2 cup toasted pecans, chopped
- 1/3 cup chocolate chips
- 1/3 cup mixed dried fruit, chopped

For the Cream Cheese Frosting:
- 8 ounces cream cheese, softened
- 1/4 cup butter, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract

For the Ermine Frosting:
- 1 cup whole milk
- 5 tablespoons all-purpose flour
- 1 cup butter, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract

Instructions




  1. Preheat your oven to 350°F (175°C). Grease and flour two 8-inch round cake pans.


  2. In a large mixing bowl, sift together the all-purpose flour, baking soda, baking powder, cinnamon, and allspice.


  3. In another bowl, combine the vegetable oil, crushed pineapple, and banana puree. Stir until well blended.


  4. Gradually add the wet mixture to the dry ingredients, stirring until just combined. Then fold in the toasted pecans, chocolate chips, and dried fruit.


  5. Divide the batter evenly between the prepared cake pans. Smooth the tops with a spatula.


  6. Bake in the preheated oven for 25-30 minutes or until a toothpick inserted into the center comes out clean.


  7. Remove from oven and let the cakes cool in the pans for 10 minutes. Then, transfer to a wire rack to cool completely.


  8. To make the cream cheese frosting: In a mixing bowl, beat the softened cream cheese and butter until smooth and creamy. Slowly add the powdered sugar and vanilla extract, continuing to beat until fluffy.


  9. For the ermine frosting: In a small saucepan over medium heat, whisk together the milk and flour until thickened, about 10 minutes. Remove from heat and let cool completely. In a separate bowl, beat the butter and powdered sugar until light and fluffy. Gradually add the cooled milk mixture and vanilla extract, beating until silky and smooth.


  10. Once the cakes are completely cool, spread a layer of cream cheese frosting over one of the cakes. Place the second cake on top and cover the entire cake with ermine frosting.
