Heavenly Pineapple Banana Cake with Cream Cheese and Ermine Frosting
Ingredients
For the Cake:
- 1 3/4 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground allspice
- 1/3 cup vegetable oil
- 1 cup crushed pineapple, drained
- 3/4 cup banana puree (about 2 ripe bananas)
- 1/2 cup toasted pecans, chopped
- 1/3 cup chocolate chips
- 1/3 cup mixed dried fruit, chopped
For the Cream Cheese Frosting:
- 8 ounces cream cheese, softened
- 1/4 cup butter, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
For the Ermine Frosting:
- 1 cup whole milk
- 5 tablespoons all-purpose flour
- 1 cup butter, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour two 8-inch round cake pans.
- In a large mixing bowl, sift together the all-purpose flour, baking soda, baking powder, cinnamon, and allspice.
- In another bowl, combine the vegetable oil, crushed pineapple, and banana puree. Stir until well blended.
- Gradually add the wet mixture to the dry ingredients, stirring until just combined. Then fold in the toasted pecans, chocolate chips, and dried fruit.
- Divide the batter evenly between the prepared cake pans. Smooth the tops with a spatula.
- Bake in the preheated oven for 25-30 minutes or until a toothpick inserted into the center comes out clean.
- Remove from oven and let the cakes cool in the pans for 10 minutes. Then, transfer to a wire rack to cool completely.
- To make the cream cheese frosting: In a mixing bowl, beat the softened cream cheese and butter until smooth and creamy. Slowly add the powdered sugar and vanilla extract, continuing to beat until fluffy.
- For the ermine frosting: In a small saucepan over medium heat, whisk together the milk and flour until thickened, about 10 minutes. Remove from heat and let cool completely. In a separate bowl, beat the butter and powdered sugar until light and fluffy. Gradually add the cooled milk mixture and vanilla extract, beating until silky and smooth.
- Once the cakes are completely cool, spread a layer of cream cheese frosting over one of the cakes. Place the second cake on top and cover the entire cake with ermine frosting.
