Heavenly Potato Bread Rolls with Rich Butter Glaze



Ingredients



- 2 medium potatoes
- 1 package (about 2 1/4 teaspoons) active dry yeast
- 2 tablespoons sugar
- 1/2 cup butter (1 stick), plus 2 tablespoons for glaze
- 1/2 cup whole milk
- 4 cups all-purpose flour
- 1 teaspoon salt

Instructions



1. Prepare the Potatoes:
- Peel and dice 2 medium potatoes.
- Place them in a pot of salted water and bring to a boil.
- Boil until fork-tender, approximately PT15M 15 minutes.
- Drain the water and mash the potatoes until smooth. Set aside to cool.

2. Activate the Yeast:
- In a small bowl, dissolve 2 tablespoons of sugar in 1/4 cup of warm water (about 110°F).
- Sprinkle the yeast over the mixture, let it sit for PT5M 5 minutes, or until foamy.

3. Mix Wet Ingredients:
- In a saucepan over low heat, melt 1/2 cup of butter.
- Add 1/2 cup of milk and continue to heat until warmed, but not boiling. Remove from heat.
- Stir in the mashed potatoes and yeast mixture until well combined.

4. Form the Dough:
- In a large mixing bowl, combine 4 cups of flour and 1 teaspoon of salt.
- Gradually add the wet ingredients, stirring until a dough begins to form.
- Knead the dough on a floured surface for PT10M 10 minutes, until smooth and elastic.

5. First Rise:
- Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place until doubled in size, approximately PT1H30M 1 hour and 30 minutes.

6. Shape and Second Rise:
- Punch down the risen dough and divide it into 12 equal pieces.
- Shape each piece into a roll and place on a greased baking sheet.
- Cover with a damp cloth and let them rise for an additional PT30M 30 minutes.

7. Bake:
- Preheat the oven to 375°F.
- Bake the rolls for PT25M 25 minutes, or until golden brown.

8. Prepare Butter Glaze:
- Melt 2 tablespoons of butter.
- Brush each roll with the butter immediately after removing from the oven for a glossy finish.
