Heavenly Roasted Carrot Cake with Cream Cheese Frosting



Ingredients


- For the Cake:
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon pumpkin pie spice
- 1/2 teaspoon kosher salt
- 3/4 cup vegetable oil
- 4 large eggs
- 1 cup light brown sugar, packed
- 3 cups carrots, grated

- For the Frosting:
- 8 ounces cream cheese, softened
- 1/2 cup unsalted butter, softened
- 4 cups powdered sugar
- 1 teaspoon vanilla extract

Instructions



1. Preheat Oven: Preheat your oven to 350°F (175°C).

2. Prepare the Cake Mix:
- In a large bowl, whisk together the all-purpose flour, baking powder, baking soda, pumpkin pie spice, and kosher salt.
- In a separate bowl, beat the vegetable oil, eggs, and light brown sugar until well combined.
- Gradually mix the dry ingredients into the wet mixture, stirring until just combined.
- Fold in the grated carrots ensuring they are evenly distributed throughout the batter.

3. Roast the Cake:
- Grease and flour two 9-inch round cake pans.
- Divide the batter evenly between the prepared pans.
- Bake in the preheated oven for about 25-30 minutes, or until a toothpick inserted into the center of the cakes comes out clean.
- Allow the cakes to cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.

4. Prepare the Frosting:
- In a medium bowl, beat together the cream cheese and unsalted butter until smooth and creamy.
- Gradually add the powdered sugar, beating continuously until the frosting is fluffy.
- Mix in the vanilla extract until well incorporated.

5. Assemble the Cake:
- Once the cakes have cooled completely, level the tops if necessary.
- Place one cake layer on a serving plate, spread a generous layer of cream cheese frosting over the top.
- Place the second cake layer on top, and frost the top and sides of the cake using the remaining frosting.
