Heavenly Spiced Apple Pie
Ingredients
- 1 store-bought or homemade 9-inch pie crust
- 6 cups apples, peeled, cored, and thinly sliced
- 1/2 cup brown sugar
- 1/4 cup granulated sugar
- 1/4 teaspoon fine sea salt
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground ginger
- 1/4 teaspoon ground cardamom
- 1/4 teaspoon ground allspice
- 1/8 teaspoon freshly grated nutmeg
- 2 tablespoons cornstarch
- 2 tablespoons butter, cut into small pieces
- 1 egg, beaten
- 1 tablespoon water
Instructions
1. Preheat the Oven: Preheat your oven to 425°F (220°C).
2. Prepare the Apple Filling: In a large mixing bowl, combine the sliced apples, brown sugar, granulated sugar, sea salt, cinnamon, ginger, cardamom, allspice, and nutmeg. Toss the apples thoroughly until they are evenly coated with the spices and sugars.
3. Thicken the Filling: Sprinkle the cornstarch over the apple mixture and stir well to incorporate. The cornstarch will help thicken the juices that release as the apples bake.
4. Assemble the Pie: Roll out the pie crust if necessary, and line the pie dish with it. Gently press the crust into the corners of the dish. Fill the crust with the spiced apple mixture, spreading it evenly. Dot the top of the filling with small pieces of butter.
5. Prepare the Top Crust: If using a second crust, place it over the apples and crimp the edges to seal. Cut several slits in the top for steam to escape. Alternatively, create a lattice pattern with strips of dough.
6. Egg Wash: In a small bowl, beat together the egg and water. Brush this mixture over the top crust to promote a golden-brown finish.
7. Bake the Pie: Place the pie in the preheated oven and bake at 425°F (220°C) for 15 minutes. Reduce the temperature to 350°F (175°C) and continue baking for an additional 40 to 45 minutes, or until the crust is golden and the filling is bubbly.
8. Cool the Pie: Once baked, allow the pie to cool on a wire rack for at least 2 hours. This allows the filling to set and makes slicing easier.
