Heavenly Spiced Oatmeal Chocolate Chip Cookies

Ingredients

- 1 cup oats
- 1 1/4 cups flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground cardamom
- 1 cup (2 sticks) unsalted butter, softened
- 3/4 cup packed brown sugar
- 1/4 cup granulated sugar
- 1 large egg
- 1 large egg yolk
- 1 teaspoon vanilla extract
- 1/2 cup raisins
- 1/2 cup mixed dried fruit, chopped
- 1/2 cup chopped nuts (such as walnuts or pecans)
- 1 cup semi-sweet chocolate chips

Instructions

1. Preheat the Oven: Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper or silicone baking mats.

2. Mix Dry Ingredients: In a medium bowl, whisk together the oats, flour, baking soda, salt, cinnamon, and cardamom until combined. Set aside.

3. Cream the Butter and Sugars: In a large mixing bowl, beat the softened butter with the brown sugar and granulated sugar using an electric mixer on medium speed until light and creamy, about 3 minutes.

4. Add Wet Ingredients: Add the egg, egg yolk, and vanilla extract to the butter mixture. Continue to beat until fully incorporated and smooth.

5. Combine Dry and Wet Ingredients: Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Be careful not to over-mix.

6. Fold in Mix-Ins: Gently fold in the raisins, chopped dried fruit, chopped nuts, and chocolate chips with a spatula, ensuring they are evenly distributed throughout the dough.

7. Shape Cookies: Use a cookie scoop or tablespoon to drop rounded dough balls onto the prepared baking sheets, spacing them about 2 inches apart.

8. Bake: Bake the cookies in the preheated oven for 12-15 minutes, or until the edges are lightly golden brown and the centers are set.

9. Cool: Allow the cookies to cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
