Heavenly Strawberry Swirl Cake
Ingredients
Cake Batter:
- 1 cup cake flour
- 1/2 cup all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 1/2 cup milk
- 3 large egg whites
- 1 teaspoon vanilla extract
- 1/2 teaspoon strawberry extract
- 4-5 drops red liquid food coloring
Strawberry Swirl:
- 1/4 cup strawberry jam or preserves
Buttercream Frosting (optional):
- 1/2 cup unsalted butter, softened
- 1 1/2 cups powdered sugar
- 1 tablespoon milk
- 1/2 teaspoon vanilla extract
Instructions
1. Preheat and Prepare:
- Preheat your oven to 350°F (175°C).
- Grease and flour a round 8-inch cake pan. Set aside.
2. Mix the Dry Ingredients:
- In a medium bowl, whisk together 1 cup of cake flour, 1/2 cup all-purpose flour, 1 teaspoon of baking powder, and 1/4 teaspoon salt. Set aside.
3. Cream the Butter and Sugar:
- In a large mixing bowl, beat 1/2 cup of softened unsalted butter and 1 cup of granulated sugar on medium speed until fluffy, about 3-4 minutes.
4. Incorporate Wet Ingredients:
- Gradually add 3 egg whites, one at a time, beating well after each addition.
- Mix in 1 teaspoon of vanilla extract and 1/2 teaspoon of strawberry extract.
5. Combine the Batters:
- Alternately add the dry mixture and 1/2 cup of milk to the creamed butter mixture, beginning and ending with the flour blend. Mix until just combined.
6. Add Color:
- Stir in 4-5 drops of red liquid food coloring until the batter reaches a desired pink hue.
7. Create the Swirl:
- Pour half of the batter into the prepared cake pan.
- Spoon 1/4 cup of strawberry jam over the batter, using a knife or skewer to create a swirl pattern.
- Cover with the remaining batter and swirl again gently.
8. Bake:
- Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
9. Cool:
- Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
10. Optional Frosting:
- For frosting, beat 1/2 cup of softened unsalted butter until smooth. Gradually add 1 1/2 cups of powdered sugar, 1 tablespoon of milk, and 1/2 teaspoon of vanilla extract. Beat until fluffy. Frost the completely cooled cake.
