Heavenly Sweet Potato Pie
Ingredients
- 1 pound sweet potatoes, peeled and cubed
- 1 prepared pie crust (9 inches)
- 1 cup sugar
- 1/4 cup molasses
- 1/2 cup whole milk
- 1 teaspoon vanilla extract
Instructions
1. Preheat the Oven
Set your oven to 350°F (175°C) and allow it to reach the desired temperature while you prepare the filling.
2. Prepare the Sweet Potatoes
Place the cubed sweet potatoes in a medium saucepan and cover with water. Bring to a boil over medium-high heat, then reduce the heat to medium-low and simmer until the sweet potatoes are tender, approximately 15-20 minutes.
3. Drain and Mash
Once cooked, drain the sweet potatoes thoroughly. Transfer them to a mixing bowl and mash until smooth, ensuring no lumps remain.
4. Mix the Filling
Add the sugar, molasses, milk, and vanilla extract to the mashed sweet potatoes. Use a hand mixer on medium speed to blend the ingredients until the mixture is creamy and well-combined.
5. Prepare the Pie Crust
Place the prepared pie crust in a 9-inch pie dish. Ensure it is evenly placed and gently press down the edges for a neat finish.
6. Fill the Crust
Pour the sweet potato mixture into the pie crust, using a spatula to spread it evenly across the crust.
7. Bake the Pie
Place the pie in the preheated oven and bake for 40-45 minutes, or until the filling is set and a knife inserted in the center comes out clean.
8. Cool and Serve
