Heirloom Tomato and Ricotta Sourdough Toast
Ingredients
- 4 slices of sourdough bread
- 1 1/2 cups whole-milk ricotta cheese
- 2 large heirloom tomatoes
- 2 tablespoons extra-virgin olive oil
- 1 teaspoon flaky salt
- 5-6 fresh basil leaves
- 5-6 fresh mint leaves
- 1 teaspoon dried oregano
Instructions
1. Prepare the Ingredients:
- Slice the heirloom tomatoes into 1/4-inch thick rounds and set them aside.
- Roughly chop the fresh basil and mint leaves. Mix them in a small bowl with the dried oregano for an aromatic herb blend.
2. Toast the Sourdough:
- Heat a large skillet over medium heat on the stove.
- Lightly drizzle or brush both sides of each sourdough slice with extra-virgin olive oil.
- Place the sourdough slices onto the heated skillet. Toast for about 2-3 minutes on each side or until golden brown and slightly crispy. Remove from the skillet and set aside to cool slightly.
3. Assemble the Toasts:
- Spread a generous layer of whole-milk ricotta cheese onto each toasted sourdough slice.
- Layer the sliced heirloom tomatoes on top of the ricotta, arranging them to cover the surface evenly.
4. Season and Garnish:
- Drizzle a small amount of extra-virgin olive oil over the tomato-topped toasts.
- Sprinkle the flaky salt evenly over each toast to enhance flavor.
- Garnish with the chopped herb blend, allowing the basil, mint, and oregano to add a fresh and aromatic finish.
5. Serve and Enjoy:
- Serve the prepared toasts immediately to maintain the crispness of the bread and the freshness of the toppings.
- Enjoy these as a light yet satisfying lunch, perfect for a quick meal or to impress guests with minimal effort.
