Heirloom Tomato & Beefsteak Delight with Parmesan Crumble
Ingredients
- 3 medium heirloom tomatoes
- 2 large beefsteak tomatoes
- 1/4 cup extra-virgin olive oil
- 2 tablespoons sherry vinegar
- 1 tablespoon red wine vinegar
- 1 teaspoon dried oregano
- 1 teaspoon flaky salt
- 1/2 teaspoon ground black pepper
- 1/2 cup freshly grated Parmesan cheese
Instructions
1. Prepare the Tomatoes
Slice the heirloom and beefsteak tomatoes into 1/4-inch thick rounds. Set aside on a large plate.
2. Heat the Oil
In a large skillet, heat the extra-virgin olive oil over medium heat. Allow it to warm through but not smoke.
3. Sauté the Tomatoes
Carefully place the sliced tomatoes in the skillet with the heated oil in a single layer. Cook for about 3 minutes on each side until they start to caramelize and soften slightly.
4. Season the Tomatoes
Sprinkle the sherry vinegar evenly over the tomatoes, followed by the red wine vinegar. Continue to simmer for another 2 minutes.
5. Add Herbs and Seasoning
Sprinkle the dried oregano, flaky salt, and ground black pepper over the tomatoes. Stir gently to distribute the flavors evenly, then remove from heat to prevent overcooking.
6. Add Parmesan Crumble
While the tomatoes are still warm, generously sprinkle the grated Parmesan cheese over the top, allowing it to slightly melt and create a delectable layer of cheesy topping.
7. Serve
Transfer the tomatoes to a serving platter and drizzle with any pan juices. Serve immediately for a fresh and flavorful lunch dish.
