Herb-Crusted Chicken with Garlic Lemon Sauce
Ingredients
For the Chicken:
- 4 boneless, skinless chicken breasts
- 1 cup bread crumbs
- 1/4 cup grated Parmesan cheese
- 1 tablespoon dried mixed Italian herbs (basil, oregano, thyme)
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 2 eggs, beaten
- 1/4 cup all-purpose flour
- 2 tablespoons olive oil
For the Garlic Lemon Sauce:
- 3 cloves garlic, minced
- 1/4 cup fresh lemon juice
- 1/2 cup chicken broth
- 2 tablespoons unsalted butter
- 1 tablespoon chopped fresh parsley
- Salt and pepper to taste
Instructions
1. Prepare the Chicken:
- Pound the chicken breasts to an even thickness of about 1/2 inch.
- In a shallow dish, combine bread crumbs, Parmesan cheese, Italian herbs, garlic powder, salt, and pepper.
- Place flour in a separate shallow dish and beaten eggs in another.
2. Coat the Chicken:
- Dredge each chicken breast in flour, shaking off excess.
- Dip in beaten eggs.
- Press into the bread crumb mixture, ensuring an even coating.
3. Cook the Chicken:
- Heat olive oil in a large skillet over medium heat.
- Add the chicken and cook for 4-5 minutes on each side until golden brown and cooked through. Remove and set aside.
4. Prepare the Garlic Lemon Sauce:
- In the same skillet, add minced garlic and sauté until fragrant, about 1 minute.
- Pour in lemon juice and chicken broth, scraping up any browned bits from the pan.
- Let the liquid reduce by half.
- Stir in butter and parsley, then season with salt and pepper to taste.
5. Serve:
- Spoon the garlic lemon sauce over the chicken.
- Garnish with additional parsley if desired.
