Herb-Infused Baked Beans with a Zesty Lemon Vinegar Drizzle
Ingredients
- 2 cups dried beans (such as cannellini or navy), soaked overnight
- 3 tablespoons olive oil
- 4 garlic cloves, minced
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon fresh sage, chopped
- 1 tablespoon fresh thyme, chopped
- 1 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
- 2 tablespoons lemon juice
- 2 tablespoons red wine vinegar
Instructions
1. Preheat the Oven
Preheat your oven to 350°F.
2. Prepare the Beans
Drain and rinse the soaked beans. Place them in a large oven-safe dish.
3. Infuse with Flavor
In a small saucepan over medium heat, warm the olive oil. Add the minced garlic, rosemary, sage, and thyme. Sauté until the garlic is golden and the herbs are fragrant, about 5 minutes.
4. Combine Ingredients
Pour the herb-infused oil over the beans. Sprinkle with kosher salt and black pepper. Toss the beans until they are well-coated with the oil and seasonings.
5. Bake the Beans
Cover the dish with aluminum foil and bake in the preheated oven for 1 hour, or until the beans are tender and have absorbed the flavors.
6. Finish with Lemon Vinegar Drizzle
In a small bowl, whisk together the lemon juice and red wine vinegar. Drizzle this mixture over the baked beans just before serving.
7. Serve
Serve the herb-infused baked beans hot, as a flavorful and satisfying dinner accompaniment.
