Herb-Infused Couscous with Chickpeas and Feta Delight
Ingredients
- 1 cup couscous
- 2 tablespoons olive oil
- 1 tablespoon butter
- 2 cloves garlic, minced
- 1 tablespoon mixed dried herbs (e.g., oregano, basil, thyme)
- Juice of 1 lemon
- 1 can (15 oz) chickpeas, drained and rinsed
- 1/2 cup fresh parsley, chopped
- 1/4 cup fresh cilantro, chopped
- 1/4 cup fresh mint, chopped
- 1 cup cherry tomatoes, halved
- 1/2 cup crumbled feta cheese
- 1/4 cup black olives, sliced
- Salt and pepper to taste
Instructions
1. Prepare Couscous:
- In a medium saucepan, bring 1 1/2 cups of water to a boil.
- Add 1 tablespoon of olive oil and a pinch of salt.
- Stir in the couscous, cover the saucepan, and remove from heat.
- Let it stand for 5 minutes, then fluff with a fork.
2. Infuse Oil:
- In a large skillet over medium heat, combine the remaining 1 tablespoon of olive oil and butter.
- Add the minced garlic and sauté for 1-2 minutes until fragrant.
3. Combine Ingredients:
- Add mixed herbs to the skillet and stir for another minute.
- Gently fold in chickpeas, cherry tomatoes, and olives. Saute for 3-4 minutes.
4. Final Touches:
- Stir in lemon juice, and season with salt and pepper to taste.
- Remove from heat and add cooked couscous to the skillet, mixing well.
5. Serve:
- Off the heat, fold in parsley, cilantro, and mint.
- Transfer to a serving dish and top with crumbled feta cheese.
- Garnish with additional herbs if desired, and serve warm.
