Herb-Infused Oven-Roasted Potato Salad with Crispy Bacon and Chives



Ingredients



- 3 lbs red potatoes with skins, quartered
- 6 slices bacon
- 1/4 cup fresh chives, finely chopped
- 2 tablespoons fresh dill, chopped
- 2 tablespoons fresh parsley, chopped
- 1 tablespoon fresh summer savory, chopped
- 2 tablespoons white vinegar
- 2 tablespoons lemon juice
- 1/4 cup olive oil
- Salt and pepper to taste

Instructions



1. Preheat the Oven
Preheat your oven to 400°F (200°C).

2. Prepare the Potatoes
In a large bowl, toss the quartered red potatoes with olive oil, salt, and pepper until evenly coated.

3. Roast the Potatoes
Spread the seasoned potatoes on a baking sheet in a single layer. Roast in the preheated oven for approximately 30-35 minutes until the potatoes are golden brown and tender, flipping halfway through cooking.

4. Cook the Bacon
While the potatoes are roasting, place the bacon slices on a baking pan. Bake in the oven alongside the potatoes, or in a separate oven if space is limited, for about 15-20 minutes until crispy. Remove and let cool, then crumble into small pieces.

5. Prepare the Herb Dressing
In a small bowl, whisk together white vinegar, lemon juice, fresh dill, parsley, summer savory, salt, and pepper. Set aside.

6. Combine Ingredients
Once the potatoes are done roasting, let them cool slightly. Transfer to a large serving bowl, then add the crumbled bacon and chopped chives.

7. Dress the Salad
Pour the herb dressing over the potato and bacon mixture while still warm, gently tossing to coat all ingredients evenly.

8. Serve
Taste and adjust seasoning if needed. Garnish with additional chives or herbs, and serve warm or at room temperature.
