Herb-Infused Potato Salad with Zesty Dijon Dressing



Ingredients



- 2 pounds potatoes, peeled and cubed
- 3 tablespoons Dijon mustard
- 1 tablespoon lemon zest (approximately 1 lemon)
- 2 tablespoons lemon juice (freshly squeezed)
- 2 tablespoons red wine vinegar
- 1/4 cup olive oil
- 4 green onions, finely chopped
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh mint, chopped
- 1/4 cup fresh dill, chopped
- 1 teaspoon salt
- 1/2 teaspoon black pepper

Instructions



1. Prepare the Potatoes:
Place the cubed potatoes in a large pot and cover with water. Add a pinch of salt to the water. Bring to a boil over medium-high heat.

Boil until the potatoes are tender and easily pierced with a fork.

2. Make the Dressing:
While the potatoes are cooking, prepare the dressing. In a large bowl, whisk together the Dijon mustard, lemon zest, lemon juice, red wine vinegar, and olive oil until well combined. Season with salt and black pepper.

3. Drain and Cool Potatoes:
